Oh so comforting!

As long as you’re not vegetarian, a corned beef hash recipe is ideal for emergencies. Corned beef keeps in the cupboard for years and it’s quick and easy to cook. For me, a corned beef hash recipe is also very nostalgic. My Mum was born just after World War Two, so corned beef was a staple in her upbringing. That meant that corned beef pie and corned beef hash were regulars on our dinner table.
Fast forward to now being a Mum to my little girl, I’m all about quick and easy dinners. Corned beef hash using sweet potatoes gives a nice twist to the traditional recipe. We serve it at home with a fired egg and a side of piping hot baked beans.
This is a perfect meal on a cold night or a quick Saturday brunch.
We use the Princes corned beef, more specifically, the low salt variety. I’m aware that little ones shouldn’t have too much salt, so use this and don’t notice any difference to the taste.

The Recipe

▪️a pan of potatoes, half sweet potato, half white potato (any sort of mash variety).
▪️half a small white onion
▪️tin of reduced salt corned beef
▪️Worcestershire sauce
▪️beans
▪️eggs

The Method

  1. peel and chop your potatoes into small cubes and boil for around 7 minutes.
  2. whilst boiling the potatoes, fry the onion in oil.
  3. when soft, add the corned beef
  4. fry together until soft and starting to crisp
  5. drain the potatoes and add to the onion & meat mix. Use a potato masher to press as you go.
  6. add a good few shakes of the Worcestershire sauce to taste
  7. whilst the mix is starting to crisp, fry eggs to your liking and cook your beans
  8. the mix will start to crisp underneath and around the edges. I sliced mine into 4 using a spatula whilst in the pan so it was easy to flip over.
As with most of my recipes, the measurements for my corned beef hash are pretty rough. But I think it gives it a good amount of wiggle room and think there’s lost of margin for creative cookery. We have cooked this lots for our toddler and she absolutely loves this tasty meal. Let me know if you give it a go!
