ALMOST NOT QUITE NANDO’S

Ingredients

Oven Baked Chicken

  • 2 Chicken Breasts

for the marinade;

  • Juice of 1 lime
  • 2 tsp dried oregano
  • 1 tsp lazy chilli
  • 1 garlic clove, crushed
  • 2 tbsp Nando’s Peri Peri Sauce

Sweet Potato Mash

  • 3 large sweet potatoes
  • 1 small knob of butter
  • 1 egg yolk
  • salt and pepper
  • 1 tsp sugar
  • a splash of milk

Macho Peas

  • 4 large handfuls of garden peas, cook enough as if you were being generous feeding 4 people
  • juice of half a lemon
  • 2 tsp dried mint
  • 1 tsp lazy chilli
  • 1 small knob of butter

Halloumi

  • half a pack of halloumi
  • a little oil for frying

Method

  1. Preheat the oven to 200c/180c fan oven/gas mark 6
  2. marinade the chicken by cutting into the chicken breasts with scissors along the top of the breasts
  3. mix the marinade ingredients together and coat the chicken. For best results leave overnight or just a few hours, the longer left, the stronger the flavour.
  4. peel and chop the sweet potato. boil until soft.
  5. mash the sweet potato and as you do, add in the butter, egg yolk, seasoning, milk and sugar. Mash until mixed well and smooth. Scoop into a small roasting pan or dish.
  6. Place the marinated chicken into a separate roasting tin.
  7. Put the chicken and potatoes into the oven for 30 minutes.
  8. When there are 5 minuted left on your timer, cook the peas in boiling water.
  9. Drain the peas and put 3/4 back into the saucepan with the chilli, dried mint, lemon juice and butter.
  10. Mash the ingredients into the peas and stir off the heat. Add back in the whole peas.
  11. Fry the halloumi in a pan or griddle with a little oil until crispy
  12. Serve all together and enjoy!
