This was a really lovely cake. I always enjoy marzipan and it felt like the perfect cake to enjoy in the sunshine over the Easter bank holiday. I used the recipe I found on BBC Good Food. It had similar vibes to my Yorkshire Tea Juicy Fruit Cake, so may try this with marzipan too.
I did make a few adjustments to the recipe and think it went well.
I didn’t soak the fruit in orange juice. I decided to swap it for tea. To do this, simply pour boiling water into a bowl along with a teabag (eg to make a huge cup of tea). Leave the teabag in and pour the fruit in to soak. I left mine for around 4 hours before draining and leaving to cool thoroughly before making the cake.
I also made my own marzipan and used a bit more than the recommended quantity. I’ve never put marzipan directly into a cake before to cook, so wondered if it would all melt apart, but it didn’t. The recipe I use was given to me by a friend. This one is very similar and vegan, so great for any vegan bakes you fancied.
