SAUCY SAUSAGE POCKETS

These warming fold overs are a bit like a calzone pizza, except no pizza dough and no skill involved.
They may look simple on the outside, but they are packed full of flavour and sauciness as the name suggests!

Serves 3

Ingredients

  • 3 white flour tortillas (the larger variety)
  • any sort of sausage or frankfurter, around 4 sausages.
  • 1 pepper or a small handful of frozen chopped peppers
  • 6 chestnut mushrooms
  • 1 small handful of sweetcorn
  • Shwartz BBQ seasoning
  • BBQ sauce
  • Worcester sauce
  • Nando’s Peri Peri Sauce
  • Cheddar Cheese
  • 2 tbsp of any flour
  • A non still baking tray or tray with grease proof paper and oven
  • Frying Pan to cook the ingredients
  • 2 small bowls or cups

Method

Pre Heat your oven to 180c/160c fan/ Gas Mark 4

Chop up your sausage, peppers and mushroom into small bitesize pieces. You don’t want them too big as they need to be small enough to be put into the centre and folded over.

Fry all of the above, adding the sweetcorn, until completely cooked, adding the BBQ seasoning and Worcester sauce as you go. You want the mixture cooked well as you don’t want it releasing more moisture in the pocket and making the tortilla soggy!

Lay out the tortilla. Mix together half and half of BBQ sauce and Nando’s Sauce. Then spread thinly onto the tortilla leaving about a 5 cm ridge around the outside. Then put in 1/3 of the sausage mix onto one side of the tortilla. Top with cheese. Repeat for the other tortillas so they all have equal fillings.

Mix the 2tbsp of flour with warm water to form a sort of glue, not too runny.

Spread the glue using a pastry brush or small spoon around the rim of the tortilla, then fold the top over, to create the calzone shape. Press firmly along the join and this ‘glue’ should hold it closed and crispy when cooking.

Grate a little cheese on the top of each and put in the oven until the cheese turns golden and the tortilla feels crisp to the touch.

Take out and allow to cool

Fill with anything you like! mushroom and blue cheese, chicken fajita, med veg….the list is endless!!
