Nanna’s Sunday Sponge Recipe

I’ve shared this recipe before I had a blog, so thought it only right to add it to my cakey collection on here.

Plus, this week I’ve used it to make a special cake for someone in our house as a very simple birthday cake.

The name, as you may have guessed, comes from visits to my Nanna on a Sunday to her bungalow in Port Isaac. She was a massive fan of a good sponge and I hope this one would make her proud.

I’ve had a good few goes at this cake and think my best advice I was given was to buy an oven thermometer (about £5) and buy decent baking parchment. I’ve also always tried to get the higher quality jam and eggs for this recipe as I think it changes it completely. If you’re only making it every so often I think it’s worth it

INGREDIENTS FOR SPONGE

3 eggs at room temp. Weigh in shells and then use same quantity for:

Softened salted butter

Caster sugar

Self-raising flour

(e.g if your3 eggs are 150g, you’ll measure out 150g butter, 150g caster sugar, 150g of flour, but this will depend on your eggs)

1 tsp baking powder

Pinch of salt

1 tsp vanilla

1-2 tsp milk

INGREDIENTS FOR THE ICING

150g salted butter

340g icing sugar

3-4 tsp milk

Few drops of vanilla

Jam

METHOD

1) Set oven to 170c

2) line 2 medium sandwich tins with greaseproof paper

3) whisk the butter and sugar on high for about 3-5 mins

4)crack eggs slowly into mix one by one. Works best if you crack into a bowl first in case you get the shell in the mix and it’s game over!!.

5) turn off the mixer and sift in the flour, baking powder and salt. Mix again for 2 minutes

6) add vanilla and milk. You want it silky but still holding a shape, not too runny

7)pop into the two tins and smooth with a palette knife if you have one

8) cook for 20 mins and check with a skewer that it comes out clean. After cooking allow to cool for a few hours.

9) make icing by beating the butter for 5 minutes, add the icing sugar and vanilla and beat again for around 5 mins.

Layer up with a  little icing sugar on top. Grab a huge slice and enjoy.
