Soft Baby Bunny Biscuits

When I saw these little cookie cutters, I couldn’t wait to give them a go.

I love going all out chocolate at Easter. A few years ago I made a cheesecake filled Easter egg and it was amazing. But I feel that Charlotte would be running around for a week after just a spoonful. So I wanted to make a little something that might be suitable for my 1-year-old and maybe younger ones too. She’s a big fan of anything cinnamon at the moment and she loves raisins, so I thought I would have a go at making some Baby Bunny Biscuits that we could all enjoy together.

These baby biscuits have gone down really well with Charlotte and a couple of her baby friends who kindly acted as my guinea pigs (thank you to Ellie, Millie and their trusting parents)

The Bunny cutter I used is from Amazon (link here) and it is just the right size for little hands (it’s a little bit bigger than my hand palm size). Recipe

Ingredients

  • 255g of rolled oats
  • 2 heaped tablespoons of coconut oil
  • 1 medium banana
  • Approx 50 ml milk of your choice
  • A couple of spoons of flour for rolling out the mix
  • 1 small box of raisins (or enough for the eyes so approx 16)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 160c (fan)

    Line 2 baking trays with parchment

    Put oats in a blender and pulse until the texture of flour.

    Mash the banana with a fork.

  2. In a large bowl mix together the oats, coconut oil, mashed banana, cinnamon and vanilla.

    Start to knead together with your hands. If its still very dry, add a little milk, a few drops at a time

  3. Roll the dough out on a floured surface. Use the cookie cutter to make the shapes. Place onto the baking sheet.
  4. Place the raisins as eyes and bake for 10 minutes or until brown at the edges. Leave to cool.
